Instant Pot Chicken & Wild Rice soup (copycat Uncle Ben's)

My husband Tom's granny used to make Turkey and Dressing Soup after Thanksgiving, and I SO wish I had gotten her recipe!! She pretty much threw all the leftovers, including the mashed potatoes into the soup. I hear it was really great!

I turned some leftover chicken into soup with wild rice, and used these copycat organic seasonings to keep it clean.
Instant Pot Chicken & Wild Rice soup (copycat Uncle Ben's)
1 yellow onion, diced
3/4 cup celery, diced
1 cup long grain rice
1⁄3 cup dry wild rice
1 tablespoon butter or coconut oil
2 cups water
1⁄2 teaspoon black pepper
1⁄2 teaspoon salt
Sauté the onion and celery in fat until tender crisp, then add the two types of rice and brown for 1-2 minutes. Add water. Pressure on Rice setting. Let NPR.

When pressure lock drops, open lid and add:
2 cups chicken bone broth
1 Tbsp nutritional yeast
1 teaspoon dry parsley flakes
1/2 teaspoon garlic powder
1⁄4 teaspoon onion powder
1 teaspoon ground turmeric
1⁄2 teaspoon ground cumin
1⁄4 teaspoon ground ginger
1 drop Black Pepper Vitality Essential Oil
additional salt as needed

Simmer for 5 minutes, then add:
2 cups leftover chicken, cubed

Let chicken warm, and then serve with organic butter style crackers. I like the Late July brand.

I used to make a "dirty" version of this soup years ago, and this is as close to that recipe as I have ever made, without all the processed ingredients and preservatives!!
This is the brand I used, and it turned out great.
